1. Microgreen Pesto
Ingredients
  • 2 cups mixed microgreens (e.g., basil, arugula, parsley)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup pine nuts or walnuts
  • 2 garlic cloves, minced
  • Salt and pepper, to taste
Instructions:
  • In a food processor or blender, combine the microgreens, Parmesan cheese, olive oil, pine nuts or walnuts, garlic, salt, and pepper.
  • Process or blend until the mixture is smooth and creamy, scraping down the sides as needed.
  • Use the pesto as a garnish for pasta, roasted vegetables, or grilled meats.
2. Microgreen Chimichurri Sauce
Ingredients
  • 1 cup mixed microgreens (e.g., cilantro, parsley, oregano)
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 2 garlic cloves, minced
  • 1/2 tsp dried red pepper flakes
  • Salt and pepper, to taste
Instructions:
  • In a food processor or blender, combine the microgreens, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and pepper.
  • Process or blend until the mixture is well combined but still slightly chunky.
3. Microgreen Infused Oil
Ingredients
  • 1 cup mixed microgreens (e.g., basil, parsley, chives)
  • 1 cup extra-virgin olive oil
Instructions:
  • In a blender or food processor, combine the microgreens and olive oil.
  • Process or blend until the mixture is smooth and well combined.
  • Strain the oil through a fine-mesh sieve or cheesecloth to remove any solids.
  • Use the microgreen-infused oil as a garnish for salads, pasta dishes, or roasted vegetables.
4. Microgreen Salsa
Ingredients
  • 1 cup mixed microgreens (e.g., cilantro, parsley, basil)
  • 1/2 red onion, diced
  • 1 jalapeno pepper, seeded and diced
  • 1 garlic clove, minced
  • Juice of 1 lime
  • Salt and pepper, to taste
Instructions:
  • In a medium bowl, combine the microgreens, red onion, jalapeno pepper, garlic, lime juice, salt, and pepper.
  • Stir well to combine all ingredients.
  • Use the salsa as a garnish for tacos, grilled meats, or roasted vegetables.
5. Microgreen Salad Dressing
Ingredients
  • 1 cup mixed microgreens (e.g., arugula, spinach, mustard)
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp honey
  • 1/2 tsp Dijon mustard
  • Salt and pepper, to taste
Instructions:
  • In a blender or food processor, combine the microgreens, olive oil, red wine vinegar, honey, Dijon mustard, salt, and pepper.
  • Process or blend until the mixture is smooth and well combined.
  • Use the microgreen salad dressing as a garnish for salads or roasted vegetables.
6. Microgreen Guacamole
Ingredients

• 2 ripe avocados, peeled and pitted
• 1/2 cup mixed microgreens (e.g., cilantro, parsley, chives)
• 1/2 red onion, diced
• 1 jalapeno pepper, seeded and diced
• Juice of 1 lime
• Salt and pepper, to taste

Instructions:

1. In a medium bowl, mash the avocados with a fork or potato masher.
2. Stir in the microgreens, red onion, jalapeno pepper, lime juice, salt, and pepper.
3. Mix well until all ingredients are combined.
4. Use the guacamole as a garnish for tacos, nachos, or as a dip for vegetables.

7. Microgreen Compound Butter
Ingredients
  • 1/2 cup unsalted butter, softened
  • 1/4 cup mixed microgreens (e.g., basil, chives, thyme)
  • 1 garlic clove, minced
  • Salt and pepper, to taste
Instructions:
  • In a food processor or blender, combine the butter, microgreens, garlic, salt, and pepper.
  • Process or blend until the mixture is well combined and the microgreens are finely chopped.
  • Spoon the butter onto a piece of plastic wrap and roll it into a log.
  • Chill the butter in the refrigerator until firm.
  • Use the microgreen compound butter as a garnish for grilled meats, roasted vegetables, or bread.
8. Microgreen Focaccia
Ingredients
  • 1 lb pizza dough
  • 1/4 cup extra-virgin olive oil
  • 1/2 cup mixed microgreens (e.g., basil, parsley, oregano)
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
Instructions:
  • Preheat the oven to 400°F (200°C).
  • Roll out the pizza dough on a floured surface to a thickness of about 1/4 inch.
  • Place the dough on a greased baking sheet.
  • In a small bowl, whisk together the olive oil, microgreens, garlic powder, salt, and pepper.
