PESTO AND SAUCES

These recipes are not only packed with flavor and texture but also offer a boost of nutrients from the microgreens.

1. Microgreen Arugula Pesto
Ingredients
  • 2 cups arugula microgreens
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup pine nuts or walnuts
  • 2 garlic cloves, minced
  • Salt and pepper, to taste
Instructions:
  • In a food processor or blender, combine the arugula microgreens, Parmesan cheese, olive oil, pine nuts or walnuts, garlic, salt, and pepper.
  • Process or blend until the mixture is smooth and creamy, scraping down the sides as needed.
  • Use the arugula pesto as a garnish for pasta, roasted vegetables, or grilled meats.
2. Microgreen Basil Pesto
Ingredients
  • 2 cups basil microgreens
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup pine nuts or walnuts

  • 2 tbsp lime juice
  • 1 garlic clove, minced
  • Salt and pepper, to taste

  • In a food processor or blender, combine the cilantro microgreens, Greek yogurt, lime juice, garlic, salt, and pepper.

4. Microgreen Mustard Sauce
Ingredients
  • 1 cup mustard microgreens
  • 1/4 cup extra-virgin olive oil

  • 1 tbsp Dijon mustard
